Tortellini Master Class
Learn the art of Tortellini di Modena, puff pastry and Balsamic Vinegar in a lesson tailored for you
Learning the art of "sfoglia" (fresh pasta) and promoting the knowledge of some of Modena's local DOP and IGP excellences, such as Balsamic Vinegar: this is the goal of the Master Class organized and promoted by Acetaia Malpighi, in collaboration with maison's chef Stefano Corghi and Tenuta Del Cigno.
Not just a simple cooking lesson, but a real educational, interactive, and immersive experience: participants will learn the art of "sfoglia" and fresh pasta, especially tortellini, under the guidance of an expert chef who has a deep understanding of the Emilian tradition, ready to reveal tricks and curiosities. Furthermore, they will have direct contact with the raw materials, from the vineyard to the table, for an immersion into the authenticity and flavors of Modena.
Master Class Features:
- Hands-on learning: participants literally "get their hands dirty", performing the various stages of preparation under the chef's supervision.
- Convivial atmosphere: an opportunity to socialize and share a passion for cooking with others.
- Experience and acquisition of new culinary skills: a way to discover the culture of a place through its typical dishes.
Practical Information:
- minimum number of participants: varies based on needs (usually 4-6 people to ensure proper management of the Master Class);
- languages available: Italian, English (other languages upon request);
- recommended clothing: comfortable, with closed-toe shoes (for the vinegar cellar visit and the cooking workshop).

The Master Class takes place at the Tenuta Del Cigno farm, owned by the Malpighi family, and includes the following stages:
- welcome with a taste of the region's symbolic wine, Lambrusco di Modena;
- short tour of the premises where Balsamic Vinegar is made, with an explanation of the production, history, and importance of this product for Modena's culture;
- overview of the cultivation of Lavanda di Modena® (Modena Lavender) and the unique environment of the Tenuta, an enchanting place nestled among lavender fields, vineyards for the cultivation of grapes for cooked must for Balsamic Vinegar and Lambrusco wine, a French-style vegetable garden, fruit trees, and plants;
- Master Class on Tortellini and Fresh Pasta, focusing on dough-making techniques and the traditional closure of tortellini and tortelloni;
- tasting of the preparations created together and some of the region's excellences, including Balsamic Vinegar, "gnocco fritto" (fried dough), cured meats, cheeses, and Lambrusco wine.
- The participants will recive a little bottle of Balsamic Vinegar of Modena, as a gift, to bring home the memory and the flavour of this experience.
