Tasting
During our free of charge educational tours concerning the Traditional Balsamic Vinegar of Modena it is possible to taste all the Collection Acetaia Malpighi products.
At the end of the visit to our ancient acetaie, visitors can start the tasting of the Traditional Balsamic Vinegar of Modena DOP that is made “vertically” to gradually accustom the palate to the many different flavours of the Traditional Balsamic Vinegar of Modena DOP, passing from the youngest Vinegar to the oldest one.
Together with the Main product, the Traditional Balsamic Vinegar of Modena DOP, visitors can also taste the other products of the Collection Malpighi:
Traditional Balsamic Vinegar of Modena IGP, Traditional Balsamic Vinegar of Reggio Emilia DOP, Flavoured Condiments, Balsamic Vinegar Pearls, Jellies and Delicacies.
All products derive from ingredients of excellent first quality: the typical Modenese grapes of the Malpighi estate.
The grapes of the vines are subject to a soft and slow crushing and a cooking with open vase on direct heat. The result of these first production steps is the must, basis and essence of all the products, with unique organoleptic characteristics, of the Acetaia Malpighi.
